2 1/2 cups all-purpose flour 1 cup unsalted butter, chilled and diced 1/4 cup ice water 6 apples, peeled, cored, and sliced 3/4 cup sugar 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 tablespoon lemon juice 1 egg yolk 1 tablespoon milk

Instructions:

To prepare the crust, combine the flour and diced butter in a large bowl. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Divide the dough into two portions, wrap in plastic, and refrigerate for at least 30 minutes.
Preheat your oven to 375°F (190°C). In a large mixing bowl, toss the sliced apples with sugar, cinnamon, nutmeg, and lemon juice. Roll out one portion of the dough and fit it into a 9-inch pie pan. Fill with the apple mixture and cover with the second rolled-out dough. Seal the edges and cut small slits on top to allow steam to escape.
